INGREDIENTS Kale White beans, tinned Olive Oil Pasta Pasta sauce (Napoli) Cherry or sundried tomatoes Basil Vegetable stock METHOD
Prepare pasta according to packet directions
Lightly fry butter beans in olive oil
Add 1/2 a cup of vegetable stock and kale
Simmer until kale is lightly cooked (but not too soft)
Stir through pasta sauce & cooked pasta
garnish with basil and tomatoes

Brown rice
Method
Fry curry paste
Add yellow lentils + 3 cups of water for every one cup of lentils
Add tinned tomato
Bring to the boil, then simmer until lentils are soft
Serve with brown rice

Rice noodles

Method
Soak the noodles in hot water
Combine all of the sauce ingredients on low heat
Add the tofu, stir until coated
Stir in the vegetables with tbsp of water and simmer until vegetables are soft
