Vegan Pad Thai

A delightful and refreshing spring dish, balancing zesty lime, fresh herbs and crunchy peanuts. 


  • 1 tbsp soy sauce
  • 1/2 fresh lime
  • 4tbsp sweet chili sauce
  • 1tbsp peanut butter 


  • Rice noodles 
  • Assortment of your favorite vegetables (try kale, broccoli and capsicum)
  • Tofu, marinated/prepared to your liking


  • Thai basil 
  • Coriander 
  • Fried onions/noodles (optional, but tastes amazing!)
  • Crushed peanuts 
  • Bean sprouts 
  • Spring onions


  1. Soak the noodles in hot water
  2. Combine all of the sauce ingredients on low heat 
  3. Add the tofu, stir until coated
  4. Stir in the vegetables with tbsp of water and simmer until vegetables are soft 
  5. Serve & garnish
