Vegan Pad Thai

A delightful and refreshing spring dish, balancing zesty lime, fresh herbs and crunchy peanuts.  Sauce 1 tbsp soy sauce 1/2 fresh lime 4tbsp sweet chili sauce 1tbsp peanut butter  Ingredients  Rice noodles  Assortment of your favorite vegetables (try kale, broccoli and capsicum) Tofu, marinated/prepared to your liking Garnish Thai basil  Coriander  Fried onions/noodles (optional, but tastes amazing!) Crushed peanuts  Bean sprouts  Spring onions Method Soak the noodles in hot water Combine all of the sauce ingredients on low heat  Add the tofu, stir until coated Stir in the vegetables with tbsp of water and simmer until vegetables are soft  Serve & garnish Featuring the Bento Glass Snack Prep Container (3-Pack).
