INGREDIENTS
Kale
White beans, tinned
Olive Oil
Pasta
Pasta sauce (Napoli)
Cherry or sundried tomatoes
Basil
Vegetable stock
METHOD
- Prepare pasta according to packet directions
- Lightly fry butter beans in olive oil
- Add 1/2 a cup of vegetable stock and kale
- Simmer until kale is lightly cooked (but not too soft)
- Stir through pasta sauce & cooked pasta
- garnish with basil and tomatoes
