Peanut Satay Noodle Salad


A crunchy and refreshing salad, perfect for light lunches and as a BBQ side. 

 

 

INGREDIENTS
Noodles (your choice - use soba for a high protein option)

Purple cabbage

Cucumber 

Spring Onions 
Crunchy Noodles 
Satay Sauce 
Shredded Carrot 
Broccoli (optional) 
Coriander 

METHOD 

  1. Cook the noodles according to packet directions 
  2. Combine salad ingredients into a bowl and toss through satay sauce 
  3. Garnish with crunchy noodles and coriander
